Greek-Style Slow Cooker Lamb Shanks

Lamb shanks are an absolutely delicious and tender cut of meat but many people are wary about cooking with them. Try this simple and Greek-style recipe that will have you marvelling at the flavour. 

Prep: 30 minutes plus 8 hours slow cooking time
Serves: 4

Ingredients
• 1 tbsp Olive Oil
• 4 lamb shanks
• Salt and pepper
• 450g baby potatoes halved
• 130g Kalamata Olives
• 1 jar sundried tomatoes
• 150ml chicken stock
• 3 tbsp lemon juice
• 3 tsp dried oregano
• 3 tsp Cretan Life Seasoning Mix for Lamb

Method

1. Season the lamb shanks with salt and pepper, heat a large heavy-based pan with Olive Oil and then fry the shanks on each side until they are browned.
2. Remove the lamb from the skillet and rub it with the oregano and Cretan Life Seasoning Mix for Lamb. 
3. Put the potatoes, Kalamata Olives, sun-dried tomatoes and salt and pepper to the skillet and fry for a few minutes. 
4. Put the chicken stock and lemon juice in a slow cooker. Add the lamb on top, followed by the ingredients from the skillet. 
5. Cook on low for eight hours or until the meat is tender.
6. Serve with mashed potato, or for a good alternative, why not make some mashed parsnip which will give you a delicious and fragrant side dish.
