Greek-style Roast Salmon

This dish is fresh, healthy and full of flavour, a fabulous and healthy mid-week meal that will make your family happy. We recommend that you have the salmon with some griddled asparagus and a rocket salad, but you can get creative and have it with any side dish you like!

Serves: 4

Ingredients:

• Extra Virgin Olive Oil
• 4 salmon fillets
• Lemon
• 2tsp Cretan Life Seasoning Mix for Fish
• Cherry tomatoes
• Asparagus
• Rocket Salad
• Aluminium Foil

Method:

1. Heat the oven to 200C/fan 180C/gas 6. 

2. Cut four squares of aluminium foil (big enough to act as parcels) and them lay them out. Brush each one with a little Extra Virgin Olive Oil and then place each salmon fillet onto its own square of foil. 

3. Brush some more Extra Virgin Olive Oil on the top of each one and sprinkle over ½ tsp of the Cretan Life Seasoning Mix for fish. 

4. Pop a handful of cherry tomatoes around each salmon fillet, then add some seasoning and a squeeze of lemon juice.

5. Pull up the side of each piece of foil and crumple the ends together so that each salmon fillet is in its own parcel than will local in the flavour and the juices. 

6. Roast in the oven on a pre-heated baking tray for around 22 minutes. 

7. Serve with griddled asparagus and a fresh rocket salad. Enjoy!
