Greek Salad with Potatoes and Eggs

Most people know that Greek Salad is made with tomatoes, sliced cucumbers, onion, feta cheese and olives ( usually Kalamata olives), typically seasoned with salt and oregano, and dressed with olive oil. In Crete, we make a delicious variation with potatoes and eggs.

Ingredients (per person):


Method:

Wash the potatoes and boil them.
Boil the eggs 
Remove the skin from the potatoes and cut them in cubes.
Cut the tomato in 8 pieces and place them in a deep bowl.
Slice the cucumber the onion and the pepper and add them in the bowl.
Add the olives and the feta.
Cut the eggs in 8 pieces and add them in the bowl as well.
Mix all the ingredients in the bowl.
