Greek Lamb with Spiced Potatoes

If you’re looking to make the best leg of lamb recipe, this tutorial is all you need! Mediterranean-style leg of lamb, covered in a special rub of Mediterranean spices, fresh garlic, olive oil and lemon juice then roasted with potato wedges and onions. This is the perfect feast for to celebrate, especially served over a bed of potatoes!

Method:

1. Heat the oven to 240°C or fan 220°C. Mince 6 garlic cloves and mix together with Organic Oregano, Minoan Taste Seasoning Mix for Lamb, salt and pepper, half the lemon juice and zest and a drizzle of Extra Virgin Olive Oil. Either ground the mixture together with a pestle and mortar or blitz it in a food processor.  

2. Make incisions all over the lamb with a sharp knife and fill the holes as much as possible with the herb mixture.  

3. Put the Lamb in a roasting dish and pop it into the oven for 20 minutes on high and then reduce the temperature to 180°C or fan 160°C. Roast it for another 1 hour 20 minutes for medium rare meat or 1 hour 40 if you prefer it to be medium. Make sure you baste the lamb a few times with its own juices and any remaining herb mixture while it is cooking. 

4. While the lamb is roasting prepare the potatoes. Firstly, wash, peel and cut them into wedges. Place them in a large lightly oiled baking dish.  

5. Combine together the Minoan Taste Seasoning Mix for Potatoes, the remaining chopped garlic, Extra Virgin Olive Oil, lemon zest and juice and the vegetable stock. Mix this with the potatoes in the baking dish.  

6. Cover the baking dish with foil and place in the oven with the lamb for 45 minutes. Remove from the oven, add the pitted kalamata olives and the grated parmesan cheese and return it to the oven uncovered for another 10-15 minutes.  

7. Take the lamb and potatoes out the oven and let the meat rest for a few minutes before serving.
