Greek-Style Doughnuts - Loukoumades

These spectacularly more-ish doughnuts are the perfect end to a meal to serve with coffees or even as a tasty afternoon treat for the kids. When drizzled with beautiful Greek Honey, we don’t know anyone who doesn’t enjoy them!

Cook: 20 minutes + rising time
Serves: 6

• 175g plain flour 
• 2 tbsp light muscovado sugar 
• Zest of 1 orange
• 1 tsp fast action yeast 
• 160ml warm water 
• Oil for deep frying (vegetable oil or canola oil are normally thought to be the best)
• 1 tsp Ground Cinnamon
• 100g caster sugar 
• Greek honey for drizzling

1. Mix together the flour, sugar, orange zest and yeast in a bowl with a pinch of salt and stir in 160ml of warm water. Stir it well until you have a runny and sticky dough – either by hand or with an electric mixer. 
2. Cover the bowl with a tea towel or similar and then leave it to rise for at least an hour, until it has doubled in size. 
3. Once rise, put the dough into a large plastic piping bag. In a separate large bowl, mix together the Ground Cinnamon and sugar together. 
4. Fill a saucepan or wok until it is 1/3 full of oil (either vegetable oil or canola oil) and heat it. To test it is at the right temperature, carefully put a pinch of flour into the oil and if it sizzles vigorously then it is hot enough. 
5. Put some kitchen roll on a tray and ensure you have a cooling rack ready, with more paper towels placed underneath to catch the drips. 
6. When the oil is ready, prepare the piping bag so that you can use it to squeeze out golf ball-sized dough directly into the oil. Do this carefully, ensuring that you do not splash the oil. 
7. Cook the doughnuts in small batches (as this will ensure the oil does not drop in temperature) and keep turning them until they are a deep golden brown on all sides. 
8. Once cooked, remove the doughnuts with a slotted spoon, give them a good shake to remove the excess oil and then place on the paper towels to drain again and then transfer to the cooling rack for another few minutes before tossing them in the sugar and Ground Cinnamon mixture. 
9. Once all the doughnuts are ready then drizzle them all with some delicious Greek honey and serve.
