Chicken Souvlaki

Like Kabobs, the word Souvlaki simply means “meat on skewers.” But Greeks also use it to describe the actual meal—warm pita, loaded with perfectly marinated grilled meat and topped with Tzatziki sauce. Other fixings are typically included, and even a handful of fries are tucked into the pita.

Method:

1. Start by preparing the marinade. Cut the chicken breasts into 2cm pieces and place them into a large bowl along with the Minoan Taste Souvlaki Spice Mix a generous squeeze of lemon juice and 2 tbsp of Minoan Taste Extra Virgin Olive Oil. Use your hands to mix it really well and then cover the bowl and place in the fridge for at least 60 minutes but 3 hours would give you optimum flavour!

2. Cut the wooden skewers so that they fit into your griddle pan and them soak them in water to prevent them from burning. Preheat a grill or griddle pan on a high heat.

3. Evenly divide the chicken pieces between the skewers and then thread them onto the sticks. If you want to, you can alternate the chicken pieces with chunks of tomato and onion.

4. Place the skewers on the griddle pan or under the grill and cook on a high heat for about 10 minutes. Turn them occasionally, making sure that all sides are nicely coloured and that the chicken is cooked through.

5. While your chicken is cooking, warm some pitta breads and prepare some Tzatziki dip and Greek Salad. 

6. Once cooked, place the chicken on top of the pitta breads and serve with a squeeze of fresh lemon juice, a generous dollop of traditional Greek Tzatziki and a fresh Greek Salad with feta cheese.
