Chicken and Olive Couscous

This wonderfully tasty yet simple recipe is perfect for mid-week meals and will bring the delicious taste of the Mediterranean to any dining table.

Serves: 2

Ingredients:

• 100g sachet of couscous
• 50g feta, crumbled
• Handful fresh mint leaves, shredded
• 300g of chicken (breast, wings or thigh fillets – whatever your preference)
• 1 lemon
• Courgette
• Red onion 

Method:

1. Heat the oven to 200C/fan 180C/gas 6. 

2. Chop the courgette, pepper and onion into chunks and then mix with the Cretan Life Organic Oregano and a splash of Extra Virgin Olive Oil.  

3. Prepare the chicken in a separate bowl by combining it with a tbsp of the Extra Virgin Olive Oil a squeeze of lemon juice and the Cretan Life Seasoning Mix for Chicken.

4. On a roasting dish place the vegetables on one side and the chicken on the other. Pop into the pre-heated oven and cook for around 25-30 minutes until the vegetables are soft and the chicken is golden on top and the juices run clear. 

5. While the vegetables and chicken are cooking, prepare the couscous according to the instructions on the packet. 

6. Once the couscous is cooked, fluff up the grains with a fork and then crumble in the feta, and mix with the mint leaves and the Kalamata Olives. 

7. Once the vegetables and chicken are cooked, remove them from the oven. Put the vegetables in the same bowl as the couscous and stir-through. 

8. To serve, divide the couscous and vegetable mixture between two bowls and place the chicken on top. Squeeze over some fresh lemon juice and enjoy!
